I was eating homemade pizza one night (a fairly regular occurrence) and I had a eureka moment. Everyone one loves potatoes, so why not mix them with pizza toppings and make pizza potatoes.

It took me a week to get around to making them, as I was in tax hell, but I knew I had to as I was desperate to eat them. I just kept thinking about them.

So today was the day. At last. Carb heaven!

Cooking in a slow cooker

I am really enjoying using my slow cooker this winter. There is a certain joy in just dumping all the ingredients in and then a few hours later when you go back there is something delicious to share with your family for lunch or dinner.

Today I made pizza potatoes, but this winter I have also made slow cooker vegetable soup; slow cooker vegan Irish stew; slow cooker triple tomato and spinach pasta; luxury slow cooker mac and cheesewhich is so good it will make you cry and slow cooker mulled wine with orange liqueur to name but a few.

Easy pizza sauce

This quick pizza sauce is made in a couple of minutes.

No cooking down ingredients, just a few key flavours mixed together for a punchy tomato sauce. A sauce you can use on regular homemade pizza too, not just on potatoes.

For this sauce I mixed together tomato passata with tomato puree, oregano for that authentic pizza flavour, some chilli powder to give it a little punch, although this is completely optional and some salt and pepper to season the sauce.

It is quick, has plenty of flavour and is perfect for this recipe.

Which cheese should I use?

For that authentic pizza flavour and texture you should really use mozzarella, but if you're desperate to make this and don't have any mozzarella you could get away with using cheddar.

Cheddar will melt beautifully and we know how well it goes with potatoes. Just think of a baked potato stuffed high with grated cheddar.

Which vegan cheese should I use?

For vegan pizza potatoes you can use either vegan mozzarella or cheddar or a mixture of both.

I recommend Violife for the cheddar, which melts well and in my opinion is the best vegan cheddar, or Tesco grated vegan mozzarella. It too is coconut based and melts fabulously. That's what we use.

What should I serve pizza potatoes with?

Hmmmm that is a question? Here are a few ideas:

  1. Serve pizza potatoes as they are. Go on you know you want to!
  2. Serve them with garlic bread and a side salad
  3. Serve them with mangetout and a spinach and tomato salad
  4. Serve them with crusty bread to mop up the sauce
  5. Serve pizza potatoes with a big dressed salad

Slow Cooker Pizza Potatoes

Potato and pizza all wrapped up in one delicious slow cooker recipe. Serve these pizza topped potatoes as a side or a comforting main with garlic bread and green salad.

prep time: 10 minscook time: 4 hourtotal time: 4 hours and 10 mins

ingredients

  • 12-14 medium potatoes, cut in thirds or quarters
  • 500g of tomato passata
  • 5 tbsp tomato puree
  • 2 tsp dried oregano
  • 1 clove garlic, crushed
  • 1/2 tsp dried chilli powder (optional)
  • a good grinding of salt and pepper
  • 250g grated mozzarella (vegetarian or vegan)
  • 2 large ripe tomatoes, sliced
  • a few fresh basil leaves (optional)

instructions

  1. In a large bowl mix together the passata, tomato puree, garlic, oregano, chilli powder, salt and pepper.
  2. Spray your slow cooker pan with no-stick spray or rub with a little oil to prevent sticking.
  3. Place the chopped potatoes in the bottom of your slow cooker and top with an even layer of the tomato mixture.
  4. Top with an even layer of mozzarella, then top with slices of tomato and fresh basil.
  5. Set your slow cooker to high for 4 hours. If your potatoes are not tender, give them longer.
  6. Serve and enjoy!
