This hCG Diet Chili recipe is designed to be made FAST in the Instant Pot, but you can just as easily do this stovetop a bit longer (instructions below) or in a slow cooker. Chili is super versatile that way!

Tips on making this recipe hCG Diet P2 approved AND super extra flavorful?

  1. Use the leanest beef you can possibly find.
  2. Use fire-roasted canned tomatoes. Life-changing really if you haven’t tried them.
  3. Use the dried herbs and use FRESH ones – you can find super affordable herbs online at savoryspiceshop.com. They really have so much more flavor. And did I mention affordable? Especially if you get them in plastic bags and not the glass jars (you can always transfer them to old spice jars later right!) #savingyoumoola #yourwelcome
  4. Salt is a very individual thing but is a main way that the flavor of the other ingredients are brought out and enhanced. I read this in a REAL chefy book okay – it explains the science behind how salt does this. I like my food pretty salty, so I might add a bit more than the recipe indicates. Salt to taste.

Tips on batch cooking while still getting accurate hCG Diet Portions of food:

This chili is the perfect batch cook recipe as it freezes and defrost well. So quick hint on making proper portions when batch cooking:

Once you select how many servings you want to make this for in the recipe, let’s say 6, cook your chili.

Then put it all in a large glass measuring beaker (most of us have those 4 cup ones- you might need to fill it a couple time depending on much you make),

then divide the total cups the recipe yielded by the number of servings you made.

So if the 6 servings you made yields 10 cups of chili, 10/6 = 1.6 cups (let’s call that just over 1 1/2 cups shall we?) So then you can portion our 1 and a half cups of chili into freezer bags and stick it in the freezer. Boom. Defrost 1 meal at a time easily and know you have the right amount and the right calories.

Weird but true fact:

Did you know spices have CALORIES? I don’t know why but I somehow thought they like, didn’t count. But we always include even spices and herbs in our calorie counts, just so you know it’s about as accurate as you can get!

If you are still wondering what all the hype about the Instant Pot is about (or as my cute mom calls it, the “insta-pot”)….perhaps if I let you know that our family uses it EVERY. SINGLE. DAY. that might show just how useful it is. Most my other kitchen appliances are like a once a month deal. The Instant Pot is not something that you will relegate to the pantry with those canned goods that expired 3 years ago, I can promise you that.

  • 7 oz ground beef ( 100g per 3.5 oz) 95-99% fat free
  • 2 tbsp onion finely chopped

  • 1/4 tsp garlic powder
  • 1/8 tsp cayenne pepper
  • 1 tbsp tomato paste
  • chopped parsley as garnish

Instructions

  1. In a medium skillet over medium-high heat, cook the onion. Top with 1/4 cup beef broth and cook down until onions are tender(about 5 min).

  2. Add the beef and cook until browned.

  3. Add the beef and onion mix to an Instant Pot. Add remaining 1/2 cup beef broths and all other ingredients. For AP, add cauliflower. Stir to combine.

  4. Cook under pressure for 15 to 20 minutes.

  5. Serve warm.

Batch cooking tip or Alternate Cooking Method Option:

  1. If you don’t have an Instant Pot, you can cook this in a medium pot. On Step 3, bring the chili to a boil and then reduce to a simmer. Cover and simmer for approximately 20 minutes for SP, or 30 minutes if using cauliflower for AP.

Recipe Notes

If you like a spicier chili, add more cayenne pepper at the end of cooking for more heat. For you brave souls (not me). If you can't find a suitable fat free beef stock, you can sub water. The beef broth just helps add additional flavor. Make a double batch and divide into four freezer bags for individual portions to last the entire week. You can also make this recipe with ground skinless chicken breast. For AP variations, try this chili with ground bison or ground turkey. To make it even more filling with more volume, add miracle rice (just those zero calorie miracle noodles cut into a "rice" shape). If you're not sure what this is or if it's okay, I have a detailed post on this: 10 things to know about Miracle Noodles on the hCG Diet. This is AP also obviously. But remember, they have NO calories. Macros in the box are for SP version (calories are for use of 95% fat free beef), but AP macros are written below as well. You may have room to add more calories to this meal - if so, my suggestion is to use additional canned tomatoes (and remember, go for the fire roasted!) There's 50 calories in 1 cup of the canned tomatoes. So if you add 1/2 cup to each serving, that makes the SP version of the recipe 208 calories.

    I made this with 99% fat free ground turkey and used chicken broth instead of the beef broth. I did not add the cauliflower. I also do not have an instant pot so I cooked it on the stove top.     Just wondering about the cauliflower. Can you buy it riced and use in this recipe? Is it mainly to bulk the recipe up and give you a veggie? I am gathering recipes and getting ready for a round starting in a couple days. I want to do more prep and have items frozen for grab and go meals. I fell back into old habits and hoped I wouldn’t have to do another round but this will help me get myself back into check.

    I made this tonight and it was delicious! I made 4 servings with lean ground sirloin (2 servings for my SO who will get beans and cheese). I think the basil made it a little sweet (?) but I love salt and spice. I’m loving your recipes – thank you for them! It takes a lot of planning and prep, but I’m actually not feeling so deprived on this round (last time I just had a dry piece of grilled protein and a vegetable for every meal – ugh).

    This is my third week making this recipe. This is now my fave “go to” recipe for hCG P2. And since I’m an Instant Pot beginner I couldn’t wait to try this recipe and I LOVE IT! I make multiple servings, add Miracle Rice and a little glucomannan flour to thicken it and it is SO satisfying! Even my man, who is definitely a “foodie”, says its really good. 🙂 I’m so glad I found this.
