Looking for a hearty and delicious recipe that’s easy to make? This beef stew is delicious and a perfect one pot meal the whole family will love.

My husband and I often take turns cooking, but the rule is that the one who cooks also has to clean up. And while I love to cook, I’m not always quite so enthusiastic about having to clean up afterwards.

Enter the Dutch Oven, the lazy, er efficient chef’s best friend. Just one amazing pot from start to finish for meals that taste far more complicated than they actually are. Quite frankly, I don’t know how I managed to make it the first 34 years of my life without one. And while I do still love my crockpot, there is something about slow-cooking food in the oven that brings out so much more flavor.

This super-flavorful beef stew only takes about 20 minutes of actual hands-on prep time, followed by a few hours in the oven. The vegetables get added in the last hour of cooking so they still have a nice crunch. It is especially good served with a thick crusty bread such as this Easy Beer Bread.

FAQs

What gives beef stew the best flavor? ›

Add spices such as turmeric, coriander and cumin at the early stage of cooking, when you are frying onions and garlic, to enhance the taste of the beef stew. Fresh herbs like coriander and bay leaves also contribute a distinct flavour without making the dish too spicy for the younger members of the family.

Does meat get more tender the longer you cook it in a stew? ›

The most important key to making stew meat tender is being sure to cook it for a long time. If you want super tender beef, you'll need to cook it on a low heat in a Dutch oven on the stove or a slow cooker for at least a few hours.

What is the basic stew formula? ›

The Ideal Stew Ratio: Two Parts Meat, One Part Vegetable

Most meat-based stews call for tough, inexpensive cuts of meat, while vegetarian recipes include the same onions, carrots, and celery typical of a beef stew. Two parts meat to one part vegetables is the perfect ratio for a meaty stew.

What is the best thickener for beef stew? ›

The three main thickening agents for gravies are flour, cornflour and arrowroot. The first two are normally used in savoury dishes while arrowroot tends to be used in sweet dishes – that said, arrowroot will work in a savoury dish as it has no flavour.

Why put tomato paste in beef stew? ›

A bit of tomato paste amps up the flavor of beef stew, giving it a richness and a punch of umami that makes the stew truly memorable.

How do you make beef stew meat not tough? ›

Cook it slow and steady.

This gives collagens in the tough muscle tissue time to melt and make the meat tender. Try tasting a bite after an hour, two hours, and three hours — you'll see how the meat goes from chewy to pretty good to fall-apart tender.

How long to cook beef stew until tender? ›

Add the beef, beef broth and bay leaves. Bring to a boil, then reduce to a slow simmer. Cover and cook, skimming broth from time to time, until the beef is tender, about 1½ hours.

Why add vinegar to beef stew? ›

Tough stew meat will take a couple of hours to get tender, and the vinegar helps this happen as well as add special flavor. Then add the onions, carrots, celery, Brussels sprouts etc and cook until the vegetables are the way you like them.

Is it better to cook stew on low or high? ›

While many slow cooker recipes can be made on high for 3-4 hours, I highly recommend cooking this beef stew on low for the full 7-8 hours. This will ensure that the beef gets nice and tender. Thicken your stew properly.

Can you overcook stewing beef in a slow cooker? ›

Can you overcook stew in a slow cooker? A slow-cooked stew is pretty forgiving, but cooking beyond the point of tenderness can dry out the meat as well as the cooking juices and sauce. If serving is delayed, switch your slow cooker to warm until you're ready to eat.

Should you cook stew with lid on or off? ›

After you bring your stew to a gentle simmer it's important to cook with the lid on as it helps to trap the liquid inside, cook the ingredients evenly, enhance the combination of flavours and prevent the ingredients from drying out.

Do you cook beef stew covered or uncovered? ›

Use a tight-fitting lid and keep it on while stewing to prevent moisture and heat loss, which can impact cooking time.

Do you bake beef stew with lid on or off? ›

Yes, it is necessary to leave the lid on when cooking a stew slowly in an oven. This is because slow cooking with a lid traps the heat and moisture inside the pot, which helps to tenderize tough cuts of meat and allows the flavors to blend together.

What can you add to stew to give it more flavor? ›

Add the wine and tomato paste to the onions and other aromatics in a pan before slow cooking. Plus, this helps to really deglaze any fond that's left. This ingredient is one that your mum and nan would probably use in their stews. It adds a bit of tang, sweetness and savoury spices that give an extra punch of flavour.

How to add taste to beef stew? ›

  1. Properly caramelised onions. This can take up to an hour to do properly.
  2. Worcestershire sauce.
  3. Soy sauce.
  4. A very small amount of star anise. ...
  5. Red wine or something with a small amount of acidity to brighten up the flavours.
