There are definitely days when I just crave a good meatball recipe! Sometimes, though, the same ‘ole, same ‘ole grape jelly and BBQ sauce just gets old! That’s why I was so excited when I finally landed this delicious recipe!

What really sets off these meatballs is the fact that there is added rice into the meat mixture. Unlike most meatballs, where you simply serve them with rice, this one has it already in!

Not only that, but these are not expensive to make – at all! Your most expensive part of this recipe will be the ground beef, and you can easily snag that for less than $5!

I’M MAKING THIS PORCUPINE MEATBALL RECIPE FOR A PARTY – DOES THE RECIPE DOUBLE WELL?

Yes! Just be sure to double everything and mix it really well, so that it’s all evenly combined! Also, be sure that it fits in your Instant Pot. Otherwise, you’ll be making it in batches!

SHOULD I ADD SAUCE OVER THE TOP OF THE PORCUPINE MEATBALLS?

Your meatballs are already going to have a sauce that they cook in, so you can just use that, but if you feel like you need something extra or want to try different flavors with them, there are a few things you can add on top of them to make them even better (or at least, try as an experiment!) Here are some ideas:

  • Brown Gravy
  • BBQ sauce
  • Shredded cheese
  • Add jalapenos or other peppers

Ingredients

  • 2 tablespoons olive oil
  • 1 ½ medium yellow onion chopped
  • 2 teaspoons minced garlic
  • 1 15 oz can tomato sauce
  • 1 8 oz can tomato sauce
  • ¾ cup water
  • 1 tablespoon Worcestershire sauce
  • 1.5 pounds lean ground beef
  • ¾ cup long grain rice
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper

Instructions

  • Saute ¾ cup of onion and 1 teaspoon of minced garlic in vegetable oil using the Saute function on your Instant Pot for about 5 minutes, until onions are translucent.

  • Stir in tomato sauce, Worcestershire sauce and water. Simmer.

  • In a bowl, combine ground beef, rice, salt, pepper and the remaining onions and 1 teaspoon of minced garlic.

  • Roll meat mixture into 1 ½ inch size balls. (approximately 18)

  • Place meatballs in the pot, in a single layer (if possible). Spoon sauce over the top of each meatball.

  • Place the lid on the Instant Pot, close the valve and cook for 15 minutes on Manual, high pressure.

  • Quick release the pressure and serve.

This is the beginning of a new little section I’m going to start adding on each recipe that I’d like to add, so you can get to know our family of 9 a little better. I’m a busy mom of 7 kids and I thought it would be a fun way to include them in the blogging.

This week, my 12 year old daughter (middle) along with her best friend (left) and favorite cousin (right) got to go to church camp together. This is the first year she’s attended and I hope she’s having a great time! I miss her beautiful smiling face!
